Low FODMAP Chicken Tortilla Soup

Follow this recipe and enjoy a flavourful and comforting chicken tortilla soup that is great for your tummy. Filled with tender shredded chicken, veggies, and aromatic spices, this recipe makes a flavourful and aromatic soup that’s gentle on the digestive tract.
Ingredients:
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 jalapeno pepper, seeded and finely chopped
1 red bell pepper, diced
1 green bell pepper, diced
1 teaspoon cumin
1 teaspoon chilli powder
1 teaspoon paprika
1 can diced tomatoes
4 cups LowFodmap L&S chicken broth
250gm cooked shredded chicken breast
1 cup corn kernels
1 cup black beans, rinsed and drained
Juice of 1 lime
Fresh coriander, chopped (for garnish)
Tortilla chips (for serving)
Instructions:
Heat olive oil in a large pot over medium heat.
Add the diced onion, garlic, jalapeno pepper, and bell peppers. Sauté until the vegetables are softened.
Add the cumin, chilli powder, and paprika to the pot. Stir well to coat the vegetables with the spices.
Pour in the diced tomatoes and chicken broth. Bring the soup to a simmer and let it cook for about 10 minutes.
Add the shredded chicken, corn kernels, and black beans to the pot. Cook for another 5 minutes to heat through.
Squeeze in the juice of 1 lime and season the soup with salt and pepper to taste.
Serve the soup hot, garnished with fresh coriander.
Serve with tortilla chips on the side for extra crunch.
