Low FODMAP Chicken Tortilla Soup

Follow this recipe and enjoy a flavourful and comforting chicken tortilla soup that is great for your tummy. Filled with tender shredded chicken, veggies, and aromatic spices, this recipe makes a flavourful and aromatic soup that’s gentle on the digestive tract.

Ingredients:

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 jalapeno pepper, seeded and finely chopped

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 teaspoon cumin

  • 1 teaspoon chilli powder

  • 1 teaspoon paprika

  • 1 can diced tomatoes

  • 4 cups LowFodmap L&S chicken broth

  • 250gm cooked shredded chicken breast

  • 1 cup corn kernels

  • 1 cup black beans, rinsed and drained

  • Juice of 1 lime

  • Salt and pepper to taste

  • Fresh coriander, chopped (for garnish)

  • Tortilla chips (for serving)

Instructions:

  • Heat olive oil in a large pot over medium heat.

  • Add the diced onion, garlic, jalapeno pepper, and bell peppers. Sauté until the vegetables are softened.

  • Add the cumin, chilli powder, and paprika to the pot. Stir well to coat the vegetables with the spices.

  • Pour in the diced tomatoes and chicken broth. Bring the soup to a simmer and let it cook for about 10 minutes.

  • Add the shredded chicken, corn kernels, and black beans to the pot. Cook for another 5 minutes to heat through.

  • Squeeze in the juice of 1 lime and season the soup with salt and pepper to taste.

  • Serve the soup hot, garnished with fresh coriander.

  • Serve with tortilla chips on the side for extra crunch.
