INGREDIENTS
½ pack of L&S Italian Sausages
1 small head radicchio (or substitute with red cabbage if you cannot get radicchio at your local green grocer), cut into 8 wedges
4 tablespoons olive oil
1 pizza base (either homemade or store bought)
125g non-dairy ricotta
2 tablespoons chopped chives
METHOD:
1. Preheat a grill or grill pan over medium-high. Cook the sausage, turning often, until cooked through, 13 to 15 minutes. Transfer to a cutting board.
2. In a large bowl, toss the radicchio with 1 tbsp. oil; season with salt and pepper. Grill, turning occasionally, until charred in spots, 5 minutes. Transfer to the cutting board. Slice the sausage and chop the radicchio.
3. Drizzle pizza base with 1 tbsp. oil. Grill until puffed and lightly charred, about 5 minutes per side.
4. Transfer the pizza base to a cutting board; spread with non-dairy ricotta. Top with the radicchio, sausage and chives; drizzle with the remaining 2 tbsp. oil. Slice into 8 pieces.
