Liver Detox Soup

Ingredients

  • ½ celeriac chopped (sub for cauliflower)
  • 2-3 leeks white section only chopped
  • 1 daikon radish chopped (omit if unable to find)
  • 1 5cm fresh ginger
  • 1 L Meadow & Marrow natural bone broth
  • 200g Rocket or Watercress
  • Lemon Liver Starter (Recipe below)

Method

  • Add all ingredients except rocket and lemon liver starter
  • Place in pressure cooker (I used the Breville Fast Slow Cooker HIGH - Pressure Cook 15 Mins) or you can bring to boil on stove top and then reduce to simmer until vegetables are tender.
  • Add rocket and lemon liver starter
  • Blend until all mixed together (make sure soup is cooled before blending). A stick blender will work too.

Lemon Liver Starter

Ingredients

  • 4 spray free lemons quartered (can use a mix of lemon and lime) keep skin on and no need to de-seed.
  • 250ml water

Method

  • In your food processor/high speed blender, blend on ingredients on high approx. 1 minute
  • Pour into ice cube trays and freeze.
