We have the snack for you! Afternoon is just a suggestion, no time of day or night is off limits for these bad boys. Like all great things, this recipe goes from day to night and casual to formal effortlessly. Dress it up, dress it down, make it your own.

Like all great food, the key to this recipe is quality ingredients.

  1. Lewis & Son Traditional Pickled Cucumbers (2 pickles--more or less to taste). Diced into small pieces.

  2. 185g Can or Jar of Chunk Tuna, Salmon or or your fish of your choice, drained. (For something extra special try some gourmet smoked fish)

  3. 1 Tablespoon of Mayo or Tahini (Chef's choice)

  4. Salt and Pepper to Taste

  5. Fresh herbs (optional) 1 Teaspoon finely chopped (Fresh dill, tarragon, basil or coriander are delicious--pick one)

  6. Crackers or Crisp Bread

In a small mixing bowl, combine the diced pickles, drained tuna, mayo or tahini, salt, pepper and optional herbs until just mixed evenly.

Distribute on crackers or crisp bread. Garnish with fresh herbs, sliced cherry tomatoes, round pickle slices or leave them unadorned. The wholesome ingredients and natural beauty of the pickle are a feast for the eyes on their own.

If you are sensitive to spice, have IBS or are gluten free, this recipe is easily adjusted to meet your dietary needs.
