Shredded Broccoli, Carrot, Turmeric, and Ginger

INGREDIENTS

First we start with vegetables that are grown sustainably on farms that do not use pesticides or artificial fertilisers. We only use Australian produce, and attempt to source as locally as possible whilst shopping as seasonally as possible. We ferment more of a product whilst it is in season. All salt used in the fermentation process is naturally evaporated sea salt from Victoria.

No preservatives or nasty ingredients are found in any of our Ferments; just wholesome ingredients that you would find in your pantry, and can easily pronounce.

PROCESS

Our Kraut-Crafters wash the produce and shred, slice, and dice the vegetables before applying salt and vigorously working the vegetables in order to rupture the membranes and draw the moisture from the produce. This creates a brine solution which harbours a hostile environment for harmful bacteria, and a hospitable environment for beneficial microbes.

When placed in a controlled temperature for a regulated period of time, the vegetables are preserved and transformed into a magical concoction.
